Made in Germany, at home anywhere

The Germans have made their decision: WMF is their first choice for kitchen knives. Do other countries agree? DISH packed its bags and embarked on a voyage of discovery.

For some time now, a nice, neat knife block containing the most important blade shapes and sizes has been the must-have kitchen status symbol – people who know about cooking invest in premium knives. A survey by the German Institute for Service Quality (DISQ) showed that customers are not put off by having to pay more if they are convinced by the quality of their new knife.

For some time now, a nice, neat knife block containing the most important blade shapes and sizes has been the must-have kitchen status symbol – people who know about cooking invest in premium knives. A survey by the German Institute for Service Quality (DISQ) showed that customers are not put off by having to pay more if they are convinced by the quality of their new knife.

“VERY GOOD” quality rating 

In the survey, WMF came out on top, earning the accolade of most popular kitchen knife brand. Alongside excellent results in respect of product quality and range, the brand image also scored very highly. To extend its reputation and appeal as number one for kitchen knives beyond Europe, WMF adapts its products on an ongoing basis to meet the needs of other cuisines and customs. Asia: This cuisine mainly uses two types of knife: the chopper and the slicer. The chopper, or Chinese cleaver, is used to chop a wide range of foods and the slicer takes care of the rest.

According to DISQ, most people surveyed use their favorite kitchen knife on a regular basis, with over 80 percent stating that they use it at least once a day. Only seven percent of customers said that they had ever felt annoyed by their kitchen knife. Those who did tended to blame the bluntness of the blade. However, around two-thirds of those surveyed also said that, despite using their knife on a frequent basis, they failed to sharpen it often, or even at all.

Craftsmanship and innovation

WMF goes to great lengths to ensure that owners do not need to sharpen their knives very often. The company’s knives are finished in such a way that they remain sharp for a long time. Performance Cut technology is a special process that achieves exact results through precise sharpening angles.

To produce knife blades with outstanding, long-lasting sharpness, WMF combines the virtues of traditional forging with the advantages of the latest precision technology. After forging the blades, they are heat treated in a special furnace, which alters the blade steel's structure, hardening it and allowing it to be ground to sharper angles than was possible before. During the final grinding process, modern precision technology gives the blades their exact, consistent shape. Blades with Performance Cut are exceptionally sharp and retain that sharpness phenomenally well. The material used is just one element in knife quality and sharpness. The forging process is what makes the real difference. WMF operates one of Germany’s largest blade manufacturing facilities in Hayingen, Baden-Württemberg. Unlike all other large manufacturers, WMF remains faithful to traditional forging techniques. In the company-owned blade production facility, blades made of special tempered blade steel are shaped using a forging hammer, before being ground and polished several times until they achieve a smooth and flawless finish. These blades perform twice as well as the DIN standard requirement.
